I had always bought store bought Mayonnaise to be used as a spread for sandwiches for my kids. Though it is very easy to make at home, I never felt comfortable storing them as they are made of raw eggs, there is always the scare of salmonella infection. Also I cannot finish them all within a day or two either, but recently when I wanted to use it as a dressing in Salads, I had to go for an eggless one as I do not eat eggs. If you are on a diet and looking for a healthy, low fat Mayonnaise recipe, this is the perfect spread for you. The most important thing is that it stays good for 10 days when kept refrigerated so there is no wastage as well.

Ingredients:
- Skimmed Milk – 1 cup (2% milk)
- Corn flour (Corn Starch) – 4 tbsp
- Salad oil / Olive oil – 2 tbsp
- Sugar – 2 tbsp
- Mustard powder – ¼ tsp
- Black pepper powder – ¼ tsp
- Salt – ¼ tsp
Instructions:
- In a small mixing bowl add corn flour and to it add ¼ cup milk and mix well without any lumps. Use a balloon whisk as it does the work well.
- Heat the remaining milk in a sauce pan, When it comes to a boil, add the corn flour-milk mixture, simmer the flame and cook till the mixture begins to thicken.
- Take of fire and add all the other ingredients and beat well with the balloon whisk till creamy.
- Transfer to a clean, dry bottle. Keep it tightly closed and refrigerated.
- This will stay good for about a week or 10 days. Use a clean spoon.
Notes:
- Do not cook corn flour mixture over high flame as it will burn easily and quickly.
- If making large quantity, do use electric hand mixer for beating to make the job quicker and easier.
- If you do not have both the oil at hand, go for any odor free vegetable oil.
- Taste the final spread and adjust the sugar and pepper according to your taste.
- Instead of sugar, you can also use honey or agave nectar.

Thank you for this recipe. My son (who is allergic to peanuts, tree nuts, and eggs) just turned 19 yesterday and he's really been wanting me to make an eggless mayo (we had gotten some store bought when he was little but we since moved and couldn't find it again). We both just made this today. I didn't have mustard powder so my son crushed a little mustard seed (it looks like mustard seed in your photo), and that worked fine. I also used 1 Tbsp olive oil with 1 Tbsp Italian dressing. Ours got quite thick, so maybe next time I'll try 3 Tbsp cornstarch instead of 4 (not sure if that will help or not). I ended up adding some more Italian dressing and squirting some prepared mustard in it too. It's quite good. Son had it on a bun with ham and cheese for lunch. It was super easy to make and it seems easier to make than some other recipes we saw that needed odd ingredients we don't normally have on hand, like flax seed. Thanks again!

I am just 12 years old now....but I'm very interested in cooking and crafting.But as we all know, TV channels or star hotels never promote vegetarianism.In this world, in every cookery channel, there is a stage where we have to cook only egg recipes and non-veg,......Anyway I just want to thank Radhika Subramanian to create a beautiful website promoting vegetarianism.....THANKS ONCE MORE

Being that I am diabetic, I wonder if I could substitute Splenda or Stevia in the place of the sugar.

This is just a basic recipe and you can just play around with the ingredients. You can use any artificial sweetener or all together drop it out as well. It depends on your personal palate.
